Ontbijtkoek - ginger bread

Probably this original name Ontbijtkoek (in Dutch) was so intriguing that I decided to try this recipe. It's nice ginger bread, soft and spicy, easy to make.

Your will need:

  • Rye flour - 1 cup
  • All purpose flour - 1 cup
  • Baking powder - 3 teaspoons
  • Cinnamon - 2 teaspoons
  • Cardamon (powder) - 1/2 teaspoon
  • Ginger dry powder - 1/2 teaspoon
  • Coriander - 1/2 teaspoon
  • Cloves ground - 1/2 teaspoon
  • Dark brown sugar - 1/2 cup
  • Dark molasses - 1/4 cup
  • Honey - 1/2 cup
  • Milk - 1  cup
  • Salt - pinch



  1. Preheat oven to 300F. Grease a loaf pan and set aside.
  2. Mix all ingredients together into a smooth batter and pour into the greased loaf pan.
  3. Bake for 80 minutes or until ontbijtkoek is thoroughly baked.
  4. Cool for 10 minutes before removing the loaf from the pan.
