Another recipe I made during my externship. This one again is the master recipe. You may flavor it with anything you like. When we made it the flavor was lemon zest and poppy seeds.

The result was great. Delicious, very soft shortbread.

For the amount of ingredient given, you get three half size baking trays. So feel free to
scale down the recipe.

Ingredients                      Amount
Soft butter                              6 lb
Flour                                      6 lb
Icing sugar                        1.87 lb
Vanilla paste                          3 tsp

Note: if you do not have vanilla paste use 5 tablespoons extract.

Method:
1. Cream butter with sugar.
2. Add vanilla
3. Add flour. Mix just to combine. This is the most important part here, do not overmix. If you do, your shortbreads won't have great texture, they will be heavy and dense.

As for the flavour you may add whatever you like. It should be either dry or paste consistency, do not use liquid for flavoring.
